Crockpot Veggie Lasagna

This Crockpot Veggie Lasagna recipe is so easy and also healthy! It can be made gluten free simply by exchanging regular noodles for gluten free lasagna noodles.
This is a great way sneak veggies into your (or your kid's) diet.  You hardly even notice the veggies after they've been marinating for several hours in the crockpot.  You can set this up in the morning and have dinner ready at the end of the day!
You can sub whatever veggies you like or have on hand, this can be a "kitchen sink" type of lasagna.  These are the veggies I usually use and I find the flavors work really well together.
The crockpot is part of what makes recipe so easy, and you can use any standard crockpot, or if you don't have one, it's just as easy to do in a glass oven-safe dish.  You will just bake it instead of crockpot it!
You may have to adjust the amounts/measurements for the size of your crockpot, but that's what is great about this recipe; it's very easy to do and you can save the leftover veggies (if you have any) for another dish, or a second round of this!
